The Lion’s mane mushrooms are cut into 1/2” slices and dry sautéed to release moisture and bring out their flavor. Make sure to toss or stir to prevent burning. Depending on moisture content, it can take 5-10 minutes over medium heat. I added a little more than a tablespoon of unsalted butter after they’ve turned golden brown and seasoned with sea salt.
