We saw @Malcom Reed try a new method similar to how turkey breast is cooked to tenderize the skin and make it melt in your mouth. Absolutely a success! The skin was tender and you could bite right through it. This method is a great alternative to that hot and fast crispy skin method. Instructions: - Smoke at 275F for 1.5hrs - Wrap in foil with butter for 1.5hrs at 275F -
