Agave parryi, known as Parry's agave or mescal agave, is a flowering plant in the family Asparagaceae, subfamily Agavoideae. It is a slow-growing succulent perennial native to Arizona, New Mexico, and northern Mexico. The leaves are grey green and have a spine at the tip.

Native Americans of many Southwestern tribes pit-roasted agaves in an elaborate process that took three or four days of cooking. The sweet meat is said to have a flavor of sweet potato, molasses, and pineapple, but is quite fibrous. Chunks of roasted agave were chewed and the tough fibers discarded.

Parry's agave is a rosette-forming perennial in the asparagus family (Asparagaceae) native to the deserts of Arizona, New Mexico, TX and northern Mexico. The plant grows 1-3 feet tall and wide in full sun and well-drained sandy or rocky soil and spreads by rhizomes to form dense colonies.
