Schabziger (German pronunciation: [ˈʃaptsɪgɐ]) or sapsago is traditional cheese exclusively produced in the Canton of Glarus in Switzerland. Schabziger is made out of skimmed cow milk and a special kind of herb, blue fenugreek (Trigonella caerulea), also called blue melilot. [1]
