Raita sauce – small tub of full fat Greek yoghurt, 1 crushed garlic, seasoning, 1 tsp of fresh mint, 1 tsp of coriander 1. Steam potatoes and vegetables until just tender. Leave to cool 2.
It’s important the sauce is almost dry by this stage and just ... and most of the remaining onions. For the raita, scoop out the seeds from the cucumber using a teaspoon, then grate the flesh.
