This cake is light, fluffy and captures the distinctive flavour of those little caramelised biscuits perfectly. It pairs beautifully with a cup of coffee. Preheat the oven to 160C/140C Fan/Gas 2½.

Indulgently rich, lightly spiced and not too sweet, this no-bake cheesecake is surprisingly easy to make. Leave out the brandy if you prefer. You will need a 20cm/8in round springform cake tin.
